On our one we sat with strangers for breakfast (but I understand that you can request to sit by yourself if you want) and sat by ourselves for dinner. But it was the same people every morning and it was actually kind of nice to meet new people.
There are two types of seating on Royal Caribbean. If you chose early or late sitting, they will assign you to the same table with the same table mates every night. (You can speak with the dining room staff when you board to request a table of just your family.) Some ship classes have premium dining tables for 2 that charge a fee. There is also specialty dining, the buffet or room service
